in Roasted aubergine & tomato curry Recipe

Used two carrots, 2 aubergines (roasted), 2 onions, a can of chickpeas and 2 bunches of frozen spinach. And two cans tomatoes. When in a rush added a tsp of patak style paste for added taste and a little coconut milk/yoghurt.
