This was just okay, I still gave it a thumbs up though because I think it can be better with a few adjustments and it's extremely easy/low touch. I only added 3 cups broth and wouldn't do more than that (maybe even 2.5 next time), as some of the other ingredients contribute to the total liquid amount as well. I found the fresh onion to be really sharp tasting relative to the other ingredients (and I don't mind raw onion) - I might saute briefly next time or make sure to add to the bottom of the slow cooker to see if that helps. I also thought it would really benefit from more seasoning (cumin, etc.)
