I added some white North American beans for some protein and used chickpea/lentil noodles. I added a few extra veggies than what it called for as well. I topped it with freshly grated Parmesan cheese and chopped basil out of my garden after the picture was taken. Lol by the time I got the idea to put cheese and basil on top I was absolutely starving! It was light and fresh, but very filling. ๐๐ผ
