This soup was definitely a hit in our house! Hardy and delicious this will be a regular on our table. We like a little heat so I added some red pepper flakes, instead of the two carrots, I used baby carrots cut in them in half. I didn't really measure them out I just went by what looked good to me. I also added a can of petite diced tomatoes and substituted wild rice for the white rice. I think I will add sliced portobello mushrooms to the next batch I make.
