I used a shallot instead of onion, cooked some frozen asparagus & added in at the same time as the spinach, & served over orzo. It was wonderful! Will absolutely make this again. It could also benefit with some mushrooms!l If your pan is piping hot from the salmon, do NOT put the garlic in 1st. Lower the heat & add the shallot/onion, then put the garlic on top of that.
