Something is missing, flavorwise. Needs umami, I think, so will try again with some Worcestershire. Definitely not bad, just not as good as it could be (yet).
Tried it again tonight, adding salt and pepper to the meat and veg and Worcestershire sauce (about 2 Tbsp) with the tomatoes and spices. Perfect! I also left it in the cast iron skillet to bake. Why dirty another dish?
