1. I used a can of Pinto Beans as an alternative
2. I just put two skinless boneless chicken breasts in the pan and shredded after.
3. Use 3 cans of red enchilada sauce
4. I added half a teaspoon each of Cumin, Paprika and Chili powder.
5. I used two packets of Mexican cheese mix
6. Toppings: I made Pico de Gallo (onion, tomato, cilantro, fresh lime juice of one lime, salt and cracked pepper); sour cream and chopped green onions
