Chicken Enchiladas

I used shredded rotisserie chicken instead and added refried beans to the recipe. Meal was delicious!

Super tasty and pretty easy. I used leftover shredded rotisserie chicken and added a bit of garlic. Great use for leftover chicken.

I used some shredded rotisserie chicken seasoned with taco seasoning instead of just salt on that step.

This was really good!! The sauce is great, I halved the amount of chili powder and used veggie Better than Bouillon. I poured a couple tablespoons of oil in the bottom of the casserole dish and it got a crisp fried texture on the bottom. Two large chicken breasts pressure cooked for 10 minutes was perfect quantity to shred and toss in with the onion and beans.

The sauce is delicious!

This was a great dinner!! I would rate it an 8 out of 10. It was actually more flavorful than I expected! The homemade enchilada sauce really brings the flavor to the party!! I let whisk auto add the items to my Walmart cart and it added a bunch of the optional items so check the recipe instructions for the optional items because you don't need all the items listed in whisk. It ordered some optional grated cotija cheese which we added as a topping but maybe it's not really needed for the dinner. We used Bush's Sidekicks Taco Fiesta Black Beans so that added more flavor than reg black beans. The homemade Enchilada sauce was pretty easy to make and it really added to the flavor of the dish. I'm not sure how it compares to canned sauce. Used the net zero carb tortilla shells and I couldn't really tell the diff. We probably used more chicken than called for and it made about 12 enchiladas so we had plenty for left overs. We'll definitely make this again!

Soooo good. I cooked the chicken in the oven and used canned enchilada sauce. Because that's what I had time for. I added green onions, cilantro, diced avocado and sour cream. Make again!

Made this with leftover baked chicken. I also made the red enchilada sauce that was easy and delicious. I served the enchiladas with a side salad and guacamole and chips.

This was delicious. I used her recipe to make my own enchilada sauce which really elevated the flavor. I did have to use smoked paprika as the main spice because my chili powder was the spicy kind.

I feel chicken recipes need green sauce, either green enchilada sauce or tomatillo & chile verde. I'll "green it up" the next time.

1/4 cup cheese in each. 1/2 cup filling. 2 tbsp sauce inside, 1 tbsp on top. Bake 350 for 20 min.

Didn’t use onions and mixed in the sauce and chiles with the chicken.

Good, my honey wasn't fond of the cubed chicken though, he's more of a shredded chicken or beef kinda guy.

Used Malcom’s Grande Gringo seasoning, only had cheddar cheese, pretty easy, turned out yummy

1. I used a can of Pinto Beans as an alternative 2. I just put two skinless boneless chicken breasts in the pan and shredded after. 3. Use 3 cans of red enchilada sauce 4. I added half a teaspoon each of Cumin, Paprika and Chili powder. 5. I used two packets of Mexican cheese mix 6. Toppings: I made Pico de Gallo (onion, tomato, cilantro, fresh lime juice of one lime, salt and cracked pepper); sour cream and chopped green onions

Use shredded rotisserie chicken. I used asadero, pepper jack & shredded Mexican blend cheeses.

Delicious, but next time I'd shred the chicken and add corn. Sauce was wonderful.

The homemade sauce recipe is a must!

I really simplified this because I was short on time and picky eaters. I bought rotisserie chicken and then just used enchilada sauce, chicken, and cheese. Rolled it up and put more sauce and cheese on top. Kids loved them.

Absolutely delicious! The enchilada sauce is super easy just use 1/2 the chili powder per recipe.
