MAKE THIS NOW! So easy and fast, with ingredients you almost always have on hand. Have made numerous times, and in husband’s “top 3 soups ever” list. Recipe is best as is, with the two cans of coconut milk. However, I sometimes reduce calories by using one can and 3 cups broth. I also omit the maple syrup and add more lime and red pepper flakes. Makes about 3 bowls, so double if more people.

I don't have maple syrup can I use something else it looks very appealing thanks

Hi Susan! My husband hates sweets, so I actually skip it, and it’s perfect! But you can also use agave nectar if you have it, or maybe honey if you’re not vegan. But I say, just leave it out :)
