Perfect weeknight dinner for when you do not feel like a ton of dishes. I personally did not want to cook diced chicken breast that long for fear of it drying out, so I removed it from the pan shortly after adding onion and garlic. Then continued on with the recipe using the same pan. I substituted broccoli for the spinach for texture, which we all loved. I am sure this isn't the last time my family will request this simple, creamy, rich, and delicious pasta dish!
