2 years on, and this is still a staple dish in my family. Even people who don’t like zucchini agreed that this was really good.
I find that I usually end up having more filling than I can fit in the zucchini’s, simply due to baking dish limitations, but the filling freezes really well & can be used again later, or just for a quesadilla filling.
