I used this recipe as my base and modified quite a bit. I chopped peppers, zucchini, and yellow squash and chopped the chicken. I cooked them in the pot with all of the spices listed in the recipe. Once cooked, I removed them to a casserole dish and drained the juice. I then cooked the onions and garlic as instructed. I added 2 cans of drained Italian style diced tomatoes, a 14.5 oz can of tomato sauce, and a can of tomato paste (since I was doubling the recipe), and cooked for a few minutes. I mixed the tomato sauce in with the chicken and veggies, and topped with cheese. Finally, I broiled in for 5 minutes until the cheese was brown. My kids and husband ate it over pasta, but I ate it by itself, and everyone loved it!
