This is a grown up version of pasta salad. Add the arugula when plating so it doesn’t get soggy in leftovers. The dressing is meant to be room temperature (it will congeal in the fridge). Using a store bought dressing will avoid that problem if you prefer it cold.
Half a red onion is still too much for this recipe.
A lot of additional vegetable options: swap bell pepper with roasted red peppers, add cucumber, radishes, broccoli, etc.
