I’ve been making a variation of this for years due to my tomato intolerance but this version is so much quicker and easier (no need for roasting, cooling and peeling peppers, and way less oily)! I tried using nutritional yeast instead of parmesan for veganuary and it was delicious, but I also made it previously and added some ricotta and that was gorgeous too . Thank you! Saving me lots of time on my search for a quick tomato sauce substitute!
