Instructions
Step 1
Chop your onion and peppers.
Step 2
In a pan over medium low heat, sizzle onion with olive oil for a couple of minutes.
Step 3
Add peppers, season with a pinch of salt and add one ladleful of boiling water.
Step 4
Cover with a lid and cook for 10-15 mins or until soften. Stir occasionally.
Step 5
In a blender, add cooked peppers, garlic clove, walnuts, Parmigiano cheese and a drizzle of olive oil. Mix until creamy.
Step 6
In the meantime, boil your pasta in some salted water until al dente, drain and mix it with you pasta water, adding some pasta water to make it sexy!

This pasta was delicious. I like a bit of heat so I caramelised a red chilli with the onion and pepper and it gave the dish such a smoky taste. I also blended some basil with it to give it a pesto vibe. I also chopped up a spinach really fine and mixed it at the end to give the dish a bit of an uplift in colour - the Parmesan so good with this!
