These cookies were really easy to make and they taste and look amazing! I’d recommend chilling the dough for at least a few hours before forming the cookies, it makes a massive difference. Also be really generous with the icing sugar! Next time I’d put more lemon zest and juice and hold back a little on the sugar in the dough - I’d probably put just over half a cup there.
