Excellent recipe! Definitely double the sauce if you have the correct amount of chicken. We had about half the amount of chicken and the sauce amount was perfect. To save time, I mix the flour and cornstarch in the same bowl so I only need to dip the chicken twice instead of three times. I have also used less sugar/honey and it is still delicious. I often do not need to add the cornstarch to the sauce. It thickens well when heated.
