I blended a bit of fresh pineapple for crisp and texture. The glossy glassy look as the sugar and juice mix tempered was beautiful and satisfying. I do say though, when I repeat this recipe (and I will... often), I will attempt a smaller shape... perhaps similar to a fudge square.
