SO GOOD!
So I didn't exactly follow the instructions. I'd made ratatouille a couple of nights before with very similar ingredients, minus potato. Instead of the chopped canned tomatoes, I had whole ones left from the ratatouille along with passata which I chucked into a casserole dish with all the other ingredients chopped up. I also added red pepper, mushroom and because I'm a student and don't have a garlic minced, I just finely chopped it into slices. Still worked! I also didn't have all the spices so guessed by adding heaps of rosemary and thyme and boy it was delicious!!
What I love most is it's so so simple and I made enough for four. The rest is in the fridge which I take out for lunches, re-heat and stuff into a pitta bread and boy, wowiee!! I'm not usually this excited by a recipe but this was awesome! You could add other things into the sandwich like avocado or cooked chicken breast, I bet!
Overall 10/10
Cooking time: 10 mins on stove (boiled potatoes separately and then added to the pot before putting in oven), 20 in oven at 190 fan degrees Celsius. You could probs do it for less, but I'm still new to cooking, haha!
