I use this as a base recipe all the time - a few suggestions: use 1/3 of the fish sauce, it's ok to reduce the sugar if you are watching that (I use 1/2), and I like to add about 1/4tsp tamarind paste. I use 8oz bean sprouts, and add a grates carrot on top with cilantro, green onions, and peanuts. If using tofu I like to toss with a little oil, cornstarch, garlic, salt, pepper and ginger powder and bake to make crispy.
