This is awesome! Very much adding it to my go-to list. I didn't feel the need to add more spices but i did have to increase the cooking time, the big thigh needed closer to 30 minutes (i reduced the temperature after 22 minutes and i started checking the chicken temperature every 3 minutes after that).
I did have a sheet of baking paper with holes under the chicken, i will try without it next time and see if anything changes.
