I used tricolor quinoa cooked in vegetable broth in lieu of lentils and added black beans and shredded carrots and I didn’t have apple cider vinegar so I used balsamic vinegar instead and used simple syrup instead of maple syrup because I didn’t have any. It was delicious!!! Also used spinach instead of arugula because that’s what I had. Love it!! Made it again and added corn, raisins and mushrooms. So good!
