Lovely! I attempted to change it up and use a mix of low fat coconut milk with the tomato to avoid using cream - it tasted good but was a bit tart, think it needs the cream to even that out. Lesson learnt! Still good though and we'll have it again. I'll just follow the recipe next time 🤣
