I goofed and added 2 28 oz cans of diced tomatoes but it was delicious, just a bit thicker of a soup. I added about 2 Tbsp of a homemade taco seasoning instead of the seasonings listed here, I also added a bit of salt to taste just before serving. I left the jalapeno out since we were serving a crowd with a lot of kids, but next time I may pull part out into a smaller crockpot and add the jalapeno because I love the extra kick! It felt like it could have used more beans, but that was probably because I added too many tomatoes 😜
We served with sour cream, avocado, cheddar cheese, and tortilla chips.
Next time I would add cilantro for sure, and maybe some lime juice to the crockpot. Or serve the limes on the side to squeeze on your bowl if you want.
