I used 2 onions and 1 can of black beans and added cheese into each enchilada instead of using chicken. This was SO GOOD. It was too spicy for my 2 year old (the sauce I got was hot on accident!) But my other 2 kids liked it even with the 7 year old saying it was really spicy. Will definitely be making this again but with a more mild sauce. I prefer a Verde sauce, which is what I used and it all came together perfectly!
