Truly a one pot dish, not a one pot, plus a measuring jug, plus a colander, plus measuring spoons, plus a hundred bowls to hold prepped ingredients. Just a baking tray and a chopping board.
The potatoes and chicken were cooked perfectly (I used mock chicken so cooked it for 5 minutes less). I added minced garlic and dried oregano and dried basil to the potatoes.
The amount of ingredients has a lot of leeway and won't spoil the flavour or cooking time, I didn't weigh out a thing and just used a jar of pesto.
Only thing I would change is that I would put the green beans and tomatoes in 5 mins earlier. My mom loved them but I'd like the beans a bit softer and the toms a bit crispy.
