So I can't use a heavy cream or dairy. So I used coconut milk to replace the butter and I used coconut cream (unsweetened) to replace the heavy cream. It was sooo good. There is also an instant pot version that was pretty good. Made this with garlic mash potatoes. Perfect pairing.

Could you taste the coconut? I usually try to throw in a small amount of Dijon mustard in an attempt to neutralize the coconut-iness when i sub with coconut milk/cream

Hi Ladywileyy! My partner and I didn't really notice the coconut taste. As long as it was unsweetened. Also I feel like the onion and parm covered the taste of the coconut.
