If you enjoy spicy, this is for you . I made substitutions by using what I had on hand. Instead of cooking the pumpkin with the lentils, I used a can of pure pumpkin. Instead of the dried red peppers, I used 2 tsp of red pepper flakes. I used two large jalapeno peppers cut in half with the seeds. I cooked the lentils alone and then added the pumpkin and the rest of the ingredients. A friend suggested using leftovers as a dip or serving over brown rice. You could use quinoa also.
