We made this last night and ended up eating it for lunch today then in quesadilla form tonight, too! It was soso flavorful and with the exception of chopping for toppings/peppers, etc, was relatively easy and quick! Will definitely be having again. Also highly recommend the ortega creamy chipotle sauce with it. So delicious!
