This recipe feels good to eat and it's fun to make! The peppers and mozzarella give it a natural sweetness so you don't have to substitute it. I went a little light on the garlic- you really do need 4ish cloves to really get that taste in there! Also don't skimp on the onions!
My only real issue with the recipe is the rice. Be careful with it! The long grain brown rice I used took ~2 cups of water and took about 40 minutes when simmering. I don't like to boil my rice because it gets mushy :( So keep an eye on the rice and all will be well! Definitely would recommend to others!
