Made this in one pot. Seared chicken in olive oil then added onions cooked covered for a few minutes. Sliced and added peppers cooked covered again before adding chicken stock (2 cans). Cooked until chicken could be pulled apart then removed and shredded. Immersion blended veggies then skimmed for any pepper skins not blended. Added back chicken and then corn and white beans. Boil then covered and reduced heat until cooked. Removed lid to try and thicken after a while.
