This turned out well and would make again.
I doubled the recipe and it made about 9 servings as a main.
Notes/changes:
- Only used ~3/4 called for butter (9 tbsp)
- double batch took a long time to thicken up milk/broth
- used slightly less milk/broth than called for
- roaster broccoli in oven with garlic and added in after milk/broth thickened instead of cooking in soup
- added 2 shredded carrots cooked on the side and added same time as broccoli
- used half sharp half medium cheddar. could see switch up the cheese being good
- blended about half soup with an immersion blender in the pot thickened it up to a good consistency
