I used what I had and soaked green lentils for 2 days and blasted them in the magic bullet. My gigantic bag of expired NO NAME flour that I got back during the initial pandemic shortages still smelled edible. My bananas were not overripe yet unfortunately so I sprinkled in some milk chocolate chips to offset the green banana taste. In a bougie flex I subbed real eggs for the flax. I don’t have mini muffin trays so I went regular size and added 10 mins to the cooking time. A triple batch made 18 muffins but I didn’t triple the baking soda because I forgot. I can’t believe this turned out so delicious, I’m going to freeze some to save for breakfast when I’m out of milk for cereal. Alex is a genius.
