An interesting curry, caused a few raised eyebrows over dinner. Well received by all. I hadn’t really thought I would crave nut curries but I find I am drawn to them. Every now and then I will have either this curry or a cashew curry (more expensive to make though, so will only make it occasionally).
I tasted after mashing the sweet potatoes and decided to add about 3 more tablespoons of peanut butter. It was still a bit liquidy so added .5 cup of red lentils, let it cook for another couple of hours and was happy with the consistency.
