it was good. my only problem is that it doesn't say how much flour to put in but I did a good if three scoops. I also put a vegan sausage and chicken in but the sausage was a mistake. unlike with a typical meat sausage it pulled apart while it was coming, I should've (and did for the leftovers) added in the sausage after it was already finished. thinking maybe using beyond our impossible sausage might give a better result too than field roast since they are more "meat like"

Yes, put the sausage at the end. First sauté it until it a bit darkened on each side. That will allow it to stay together. And if desired, add seasonings to the meat for meshed flavor. Many in NOLA sauté (brown) their seasoning meats first in soups, stews, and gumbo. (However, it's not necessary).
