Hi Jessica, I made some meatballs with gluten free breadcrumbs recently and the recipe I followed told me to chill the meatballs for an hour before cooking - first time in a long time my meatballs did not fall apart. I bet if you chilled these patties 30-60 minutes (I'd recommend 60 since they are big) before frying they would stay together!
