I love the flavor of this dish, but the pasta always ends up undercooked on top and overcooked on the bottom. Next time I’m simmering the veggies and chicken in the broth like a soup and mixing in cooked pasta and cheese after.
-Bagged mozzarella keeps its form, so I prefer crumbling a ball of fresh mozzarella instead, so the dish is more gooey
-paprika, Italian blend, chili flakes, garlic powder, all make great additions, use as much as your heart desires (as-is is tasty, but a bit bland)
