I did brine the turkey breast. We used wild turkey. It was tender and tasted good. The potatoes were ok. I prefer more garlic and seasoning usually.
In my instapot, I noticed that you have to be really careful with deglazing in the pot. It easily will read as "burn" if it is not completely deglazed before moving on to the next steps.
Overall I would make it again. Definitely prefer boneless turkey breast and this method keeps the meat tender. I might change up the garlic and pepper to taste for us for the potatoes.
