This is essentially bread pudding, you're not supposed to dry the bread out!

I don't necessarily agree with Sarah. Traditionally, french toast was made from leftover, dried bread. The dried bread helped the bread keep it's form after being soaked in egg mixture. In this case, the author used a "stiffer" bread to have a more fool proof way of keeping the bread from collapsing, but I would usually dry out my bread as well. My husband's family all dry out their breads (even great-grandma!) Never had an overly dry (or stuffing-like) french toast before 😂. In this case with the recipe and type of bread used, the extra step was probably just not as necessary.
