So this recipe says like 8 to 12 hours long. And I said no thank you. I halved the chicken broth and pretty sure I didn't make as many potatoes. I also cut them super small. Sliced my chicken breasts in halves.
Threw in the bacon and onions, laid down the four slices of breast, threw my potatoes and carrots on top and then put in about 4 cups of chicken broth. Threw a slew of seasonings -- Italian, salt and pepper, little garlic, celery salt since I forgot normal celery, poultry seasoning, and some Cajun.
On high, I left it for 3 hours and 45 minutes. When it beeped, I chopped up some broccoli and roasted it in the oven with some squirts of lemon, salt and pepper and garlic. While that cooked, I checked the chicken and potatoes. Shredded chicken and mashed some of the potatoes and then it all back in.
Once the broccoli finished, I threw it all in, grabbed a bowl and finished with a handful of shredded cheese. Absolutely delicious.
Getting everything prepped took a little but it was beyond worth it. I kept most of the potatoes whole so it looks more of a stew but dealer's choice. (:
Next time I will put the right amount of chicken broth.
