Healthy Crockpot Potato Soup with Chicken

Bland ahhh hell

Very easy and good! Honestly, you could prep everything and make it a freezer dump and go recipe. I don't know why some people say it's taking too long. I used whole chicken breasts, and they were only 25% dethawed (I was being lazy and just dethawed them enough to separate them). I put it on low for 8.5 hours (my normal work shift + drive time), and everything was done to perfection! I did layer it and use only 4 cups of broth. Maybe that's why it cooked really well? Onions and garlic on the bottom, then chicken breasts, then celery, carrots, and potatos. I added my own seasonings along with what was recommended.

This took way too long to make in the Crockpot and was very bland.

So this recipe says like 8 to 12 hours long. And I said no thank you. I halved the chicken broth and pretty sure I didn't make as many potatoes. I also cut them super small. Sliced my chicken breasts in halves. Threw in the bacon and onions, laid down the four slices of breast, threw my potatoes and carrots on top and then put in about 4 cups of chicken broth. Threw a slew of seasonings -- Italian, salt and pepper, little garlic, celery salt since I forgot normal celery, poultry seasoning, and some Cajun. On high, I left it for 3 hours and 45 minutes. When it beeped, I chopped up some broccoli and roasted it in the oven with some squirts of lemon, salt and pepper and garlic. While that cooked, I checked the chicken and potatoes. Shredded chicken and mashed some of the potatoes and then it all back in. Once the broccoli finished, I threw it all in, grabbed a bowl and finished with a handful of shredded cheese. Absolutely delicious. Getting everything prepped took a little but it was beyond worth it. I kept most of the potatoes whole so it looks more of a stew but dealer's choice. (: Next time I will put the right amount of chicken broth.

Use stovetop instructions! I boiled everything but chicken for 15 minutes. Then I added uncooked bite size pieces of chicken and cooked 10 minutes. I used bacon bits, half cup. Add 4 T Italian seasoning and 1 cup chopped green onion. I used 2 T dried parsley instead of fresh. I topped mine with light sour cream.

I boiled water for chicken bouillon cubes and cut the time by 1.5 hours and it was perfect. May want to add more spices if you like a little more flavor in your meals. I used oregano because I was out of thyme and it had a great flavor.
