This recipe is a great starting point! I ended up roasted the potatoes seperate, I felt this gave a better flavor versus the bottom potatoes covered in liquid just steaming/boiling. The sauce did not thicken as much as I would like based on the recipe, so I let it heat to thicken more. I added a bit more Dijon than recommended due to it initially not having that Dijon kick like I expected it too. Over all, this is a great recipe I am definitelykeeping in my back pocket for a quick and easy meal! As a busy mom, this recipe was fast and easy.
