Love this so much, Melissa!! Thank you so much for sharing. Happy to hear you've found a new go-to for warmer weather oatmeal :) And yes - love that frozen fruits are both more affordable, and less likely to go to waste too!

Thanks to you too, Carrie! My spouse and I both have a lot of medical issues, so eating healthy food that doesn't cost a lot of our already-strained budget is an ongoing challenge. Usually we find we have to compromise on flavor, affordability, nutrition, or accessibility - for example, a lot of the made-from-scratch recipes we used to love are just too hard to make when they require standing for long periods of time and you aren't well enough for that. It's also not often that a recipe that is written to be nutritious and flavorful is also accessible for people who can't afford to run out and buy the newest "super" ingredient. Final bonus, I've been making this with frozen raspberries all week, and our ten-year-old who is not a big fan of "weird plant food" just asked me to make him a bowl for tomorrow morning. This recipe is really winning :)

Love to hear this, Melissa!! So great that your 10 year old is loving it too - always a win haha. Thanks so much for sharing your experience and struggles. I totally understand that a lot of healthy eating can seem overwhelming and $$$ (especially these days)! I try my hardest to share recipes that are fairly simple to make, not too time consuming, and without too many fancy superfoods and powders. I think the true superfoods are simply just whole foods - fruits, veggies, whole grains, proteins, etc!
