A few notes...1) believe in the mixing method, it seems to work, but you will likely need to do a bit at a time. Unlike a stand mixer which works all the dough, the stuff on the bottom gets kneaded, while the stuff on top sits. Its okay if its going round and round as a ball, check the consistency and looknfor window pane. 2) the dough rose quickly for me and gained volume and i made the mistake of assuming i needed to divide the dough between two smaller bread pans. This wants to be one loaf, it will work out. 3) i got less airy bread than i was hoping for and may look at add some ascorbic acid of do even more kneading to help give the bread the ability to rise up and get fluffy.
