Made some serious alterations. Browned shrooms with shallots and some garlic. Put them aside and deglazed the pan with white win, added dried tomatoes to that and added red pepper flakes and oregano. Simmered until wine was gone. Added pasta water and mushrooms back to the pan, stirred vigorously until it started to reduce. Added half and half for some better consistency. Added in pepper and marjoram. Added pasta and tomatoes. Stirred with heat until water was gone and I had a nice thick sauce. Added a splash of tomato puree and stirred it in. In hindsight, I would have left out the oregano honestly.
