I changed the spinach for Kale and added caramelized onions. I also made a little honey mustard to put with it. This probably crosses some sort of Mediterranean bad juju line, but I really liked it!

Those changes are certainly compatible with the "Mediterranean Diet" concepts, although perhaps somewhat less representative of the typical ingredients of the actual region.
