I'm new to cooking and this was super simple to make! I stayed pretty true to this recipe, except for nixing the hot sauce and I switched out the zucchini for cucumber because there weren't any available at the store, as well as left out the paprika. I like spice, but I wanted to try it out as a regular version first, without the sauce. Super yummy! I'm not an official vegetarian, but I would say this is a great way to ease yourself into vegetarianism if that interests you because it's so good, you won't ever miss the meat in a burrito! You can also use the leftovers to store for the next day for work or school. 10/10 - would recommend!
