This is a fantastic recipe for weekly lunch planning. So easy and yummy!😋 I also have to add that I air fry them and I do add a lot more seasoning and use Mexican cheese blend. We use a salsa and vegan sour cream as a topping. To reheat after freezing we do reheat in the microwave for a minute and then air fry again. These are a hit with everyone vegan or not.

These were so good! Make them! Easy to prepare, especially for those days when you are not in the mood to make a meal and on the verge of ordering takeout. I realized as I was making them that they can also be frozen for meal prep, so big win there! I was half tempted to cook up another batch of it and make frozen burritos, and next time I make these I will definitely be doing that! I added a little minced garlic but aside from that I didn’t deviate from the original recipe. I also cut the zucchini and red pepper and onion in small pieces. I did grill them after preparing and they came out with a perfect bit of crunch and the cheese melted so nicely! I didn’t find them to be too spicy either. I ate my burrito with a little bit of mild salsa. This made enough for two teenagers and myself, which came out to 5 small/medium sized burritos and enough leftover filling for probably 2 more burritos. I’m saving the filling for lunch tomorrow. I will be making these again for sure! Easy prep, minimal cleanup, tastes great=another new go-to meal. The teens didn’t even miss the lack of meat in them, either! I might add a vegan ground beef substitute next time and maybe some corn, but all in all these were just fine the way they are.
