Was delicious! For those that like some spice, toss a couple bird's eye while it's simmering at the end. I didn't use coconut oil, I used grape seed so I could hit a higher temperature without burning.
My only real gripe is that it's a bit on the sweet side. And no, my coconut milk was not sweetened. Still, I think it worked well. Recipe could use some better measurements though. I used 1 tsp of the red curry paste and no water... It says vegetable soup for some reason? So... Veggie stock I guess. And I just eyeballed that but probably about 2 and 1/2 cups.
