I have made this for years as my frozen lunch meal (quartered and frozen). I double the recipe for 4 quiches. I use store bought pie crust. It is great and tasty. I add some mustard to the mix and have done parboiled broccoli in lieu of spinach as well. Great options. Good to have a cheaper option with frozen spinach. Milk instead of cream Is just fine. Great as a frozen meal to others when needed.
